I lied. Here's one post. Now I'm serious. Everything else is coming tomorrow.
I've been meaning to share the recipe for the Snake's favorite breakfast item.
Seriously, my kid devours them.
I usually make them from scratch.
2 c. flour
2.5 tbsp baking powder
3 tbsp sugar
.5 tsp salt
1.5 c. milk
2 tbsp melted butter
1 c. peeled & chopped carrots
a dash of vanilla & cinnamon are optional
but Jake highly recommends it.
I use whole wheat flour and
I chop the carrots in the processor so they're nice and tiny.
You know the deal:
Mix the wet ingredients.
Mix the dry ingredients.
Combine all ingredients
Then add the carrots and mix well.
That's Jake-the-Snakes favorite part.
Spray pan with butter or oil.
Pour 1 ladle-full at a time to make perfectly round little guys.
Cook until lightly browned on each side.
OK. I'm going to tell you a secret... if you're not the make-it-from-scratch kinda gal,
you can just add a cup of carrots to the mix.
When I do this (and I do sometimes) I use the multi-grain pancake mix from Trader Joe's.
They don't even need syrup.
I don't think the Snake knows about syrup yet...
please don't tell him.
Carrot pancakes are just perfect for freezing.
I would usually wrap them individually in parchment paper
but this day I was feeling particularly lazy.
So in the zip lock bags they nakedly went.
Let me tell you... frozen pancakes are perfect for those early morns before the coffee is brewed.
Which is pretty much every morning for me.
Just take one out and nuke it or put it in the toaster oven at 200 degrees for about 5 mins.
