{ recipe : taco salad -wraps- }


it's not that we eat junk on the weekend, it's just that we eat  a  l o t 
so sometimes on mondays we have a good ol' salad
lettuce gives our system a break.
but with a hungry man, a stocky child, and a pregnant woman
it has to be a hearty salad that will fill tummies really well

and taco salad is an all around favorite


it starts with:
1 diced tomato
1/2 a diced red onion
1 pitted + scooped avocado
1/3 of a cup of fresh chopped cilantro
the juice on 1 lime

let that sit in a salad bowl with a bit of salt.
letting the onions sit with lime and tomato juices softens them.

cook 1/2 a pound of ground beef with all purpose adobo goya 

then chop the head of 1 washed lettuce
and let it drain in a strainer
(i keep making a mental note to get one of those salad spinners)


i warm up some tortillas over the stove flame
(we don't use our microwave 
but it's much easier to wrap up tortillas in a paper towel and heat them for 30 seconds)


right before it's to be served, i toss the salad greens 
with the tomato/onion/cilantro/avocado/lime mixture


place the tortilla on the plate and serve the salad on top
then some ground beef on top


don't have tortillas? it doesn't matter. probably healthier anyway.
sometimes we eat it as a wrap, sometimes just with a fork and knife.


i'm kinda in the mood for this again.

Taco wraps or salad is a fav here too. We have it every other week! I love your spice combinations.

wow that looks so good, I mean tacos are good enough already but that just makes them look 1000x better. now you have me craving tacos!
