I'm a huge coconut fan so, yeah, I like to eat these.
They are super easy to make which is always a plus.
They are based off of this recipe which I was so happy to have found early in our gluten and dairy free diet journey.
Gluten-free/Dairy-free Chocolate Chip Cookies
1 cup coconut flakes
1 cup almond or oat flour
1/4 cup maple syrup
1 tbsp vanilla
1/2 cup chocolate chips, mini or chopped
* we use these from Target *
Mix coconut and flour well. Add egg, syrup, and vanilla. Then add chocolate chips.
Bake at 350 for 12-15 minutes. Coconut bakes quickly so keep an eye on them!
